About Sergio Herman

Sergio Herman (1970) has inherited his love for cookery from his father, with whom he worked side by side at the ‘Oud Sluis’ restaurant for several years, before taking it over entirely in 1990. There, he brought to life the fresh high-quality products from the polders and the waters of Zeeland, thereby laying the foundation of what would become an unparalleled ‘wow’ kitchen, and would eventually earn him 3 Michelin stars.

“The Surface collection is a very personal project for me and one that comes from a long-standing desire to create and surprise. It was inspired by the raw nature of Zeeland. Its rough textures and beautiful imperfections expose what is real and what is true… From the deep grey of the mystic North Sea to a scarred and ageing skin, every surface is a symbol of depth. 

Every surface tells a story. Which is why I was excited to be given the opportunity to tell my own story and to translate my professional experience into this very personal range of tableware. “I know it, you know it, every chef knows it … the most important tools for a chef are his knives!”

Whether you order a portion of olives in Italy, a crema catalana in Spain or a crème brûlée in France, they are practically always served in terracotta oven dishes. They are handy, versatile and a joy to behold on every table, so I simply could not resist adding my very own version of these dishes to the Surface Collection. Oven-proof, easy to use and maintain, contemporary, and with their own, unique identity - that is what I wanted. And it is with great pride that I can say that they have turned out just as I imagined them! The matte black makes them unique, the stem makes a world of difference in the handling and the material and quality are identical to the classic examples.

Surface kitchen knives and steak knives

Love for craftsmanship, friendship and perfect cooperation. These were the three pillars that Tomer Botner, Serax and I established as a basis for the exclusive, handcrafted knives for the Surface Collection. A large all-round kitchen knife, an office knife for the more delicate work and a steak knife, with blades made of the strongest Swedish steel and handgrips from the same high-grade maple wood we use for the cutting boards. I wanted these knives to be suitable.

Every chef will agree with me: the road to perfection begins at the cutting board.

There is no way you can conjure a delicious and healthy meal onto the table when your knives are dulled by the wood. Thus, my choice of high-grade Canadian maple wood for the cutting boards of the Surface Collection was the logical one. In addition, the wood becomes more and more beautiful as it ages. I chose different sizes and shapes for the Surface Collection, so that the boards are not limited to the preparation of the food, but they are also perfect as presentation boards.
